Dear raghav, I do not see you made any mention of tomatoes in the list of ingredients, but, in the method of dish preparation. So, could you please, specify the amount of the same to be used in the recipe? Thanks in advance.

The addition of onions, ginger, garlic and tomatoes are optional of course. I tried the addition of these too over the vegetables, all chopped finely.

This is a typical north-indian recipe and tasty. My mother in law prepared it a different way (she was from Lucknow too). She heated mustard oil, put in a dash of hing, methi and jeera seeds, after it crackled she put in the vegetables and sauteed it till lightly tinged, then put in the spices on top of the vegetables and covered the pan and cooked on low heat, after a while she gently mixed it and last of all added salt and amchur. Give it a try and see. Thanks just the same.

This recipe turned out just like our cook in Lucknow made it. I really like it. Yesterday I started to make some and I didn't have any tomato so I used some thick salsa. Came out fine. I like basically the same mix of spices in almost all my Masala type dishes except I use ground cayenne instead of chili powder.
