Veggie Delight

Mixed vegetables in rich gravy.

Can be used as a side dish with rotis or parathas.

Ingredients vegetarian 2 servings

  • 2 cups Vegetables, mixed
  • 2 tbsps. Tomato Sauce
  • 1 tsp Sesame Seeds
  • 1 pinch Cumin Seeds
  • 2 tsps. Coriander Seeds
  • 3 cloves Garlic
  • 2 tbsps. Ginger
  • 10 leaves Mint
  • Turmeric Powder to taste
  • Red Chili Powder to taste
  • Salt to taste
  • 5 tbsps. Vegetable Oil
  • 1 tbsp Raw Cream

Directions

  1. Semi-boil all the vegetables.
  2. Grind together sesame seeds,corriander seeds and zeera.
  3. Grind ginger,garlic and mint leaves together
  4. Fry the onions in a shallow pan till golden brown in colour.
  5. Then add ginger garlic paste and fry till the raw smell disappers.
  6. Add all the semi-boiled vegatables to the onoins and cover and keep till half done.
  7. Now add turmetic powder,chilli powder and cook for a couple of minutes.
  8. Add the ground masala powder,tomato sauce and cook for a couple of minutes.
  9. Now add half a cup of water,salt and allow it to cook well.
  10. Once it is vegetables are done and when the gravy thickens ,off the stove and add the cream.
  11. Serve hot with rotis or parathas.

insted of using tomato sauce in the recipe if chopped tomatoes (finely chopped)are added and cooked, i think it will give a better taste than what exactly it is giving by putting tomato sauce and can be cooked just after the onions are cooked and see the difference actually it will not give the artifical flavour by adding tomato sauce
