Easy Bhindi Masala

a commonly made masala which i make for packing lunches....good as a combination for chappatis

Ingredients vegetarian 4 servings


    • 300 gms bhindi (cut into half an inch)
    • 2 onions finely chopped
    • 2 tomatoes finely chopped
    • 1 tsp ginger garlic paste
    • 2 tsps red chilli powder
    • 1/2 tsp turmeric powder
    • 1/2 tsp mustard
    • 1/2 tsp jeera
    • few curry leaves and coriander
    • salt to taste

     

    Directions

    1. heat oil and splutter mustard and jeera.
    2. add ginger garlic paste and curry leaves.
    3. fry the onions well into the oil.add the red chilli and turmeric and salt.
    4. now add the tomatoes also and cook till tomatoes are soft and the oil shows up.
    5. add in the cut bhindis.
    6. keep stirring in between to ensure it does not stick to the bottom
    7. cover and cook on simmer till bhindis are soft and done.

    Another alternative is use mustard oil and omit the mustard seeds and use methidana instead.
