Dear Salma, in case of the above recipe, incorporate milk, means, 'slowly add' or 'unite' the milk with the mixture that is already being cooked on stove. Chances of milk getting curdled is high when it is added in hot things on high flame, resulting in a badly cooked dish in the end. So, in order to avoid reaching such situation, you ought to take care by reducing the flame atleast a couple of mintues before incorporating raw dairy products such as, milk and yoghurt, in a slow and strring fashion. Hope, the explaining I have done here, is, fair enough.

This looks lovely! I like my tikka massala quite creamy so I generally use some cream in the sauce! I've recently bought a trditional tandoor clay pot oven which makes really authentic tikka meat or fish! www.squidoo.com/chickentikkamassala

You can add food color that you can get from Indian Grocery Store when you marinade the chicken. You dont need to wash the yoghurt before cooking.

I tried this recipe, my husband loved it. i have couple of questions. how do you get the color that is shown on the picture and do i wash the yoghurt off the chicken before cooking it??? i cooked the chicken in the skillet and it left little yoghurt crumb on the chicken. i puray the sauce, but the bright color wasn't there. Please if you could suggest some tips. The taste was delicious. i will deffinately make it again. thank you for the recipe.
