Mutton Chop Qorma

Typical Awadhi Cuisine

A very fine mutton delicacy from Awadh region of Uttar Pradesh

Ingredients non vegetarian 6 servings

    • 20 Mutton Chops or Ribs (800 gm)
    • 6 tbsp oil
    • 3 large onions
    • 1 cup deep fried onion paste
    • 1 large cup thick curd
    • 5 tsp garlic paste
    • 3 tsp ginger paste
    • 1 1/2 tbsp Coriender/dhania powder
    • 1 tsp chilly powder
    • 30 gm cashew nut paste
    • 15 clove
    • 15 green cardamom
    • 1/2 tsp javitri+ elaichi powder (Mace+ Green cardamom)
    • 1/2 tsp garam masala powder
    • salt and water 


    1. Mix dhania and chilly powder in curd and keep aside.
    2. Heat oil in a pan put cardamam and cloves.
    3. Add chopped onions and fry till light brown.
    4. Add ginger and garlic paste, fry for two minutes.
    5. Add mutton and fry for 2 minutes on high flame.
    6. remove pan from the gas to cool a little, then add curd mix, fried onion paste and cashew naut paste, and fry for 3 minutes on reduced heat.
    7. Add 5 cups of water and salt, bring it to a boil, reduce heat and keep cooking stirring occasionally till meat is done.
    8. Gravy should be medium thick.
    9. Finely add garam masala and javitri-elaichi powder and cook for 5 minutes.
    10. garnish with chopped dhania
    11. Eat wit rice, rumali roti or tandoori roti.
