Eggs on Tomatos

Nice and simple

Indian adoptation of Italian dish

Ingredients non vegetarian 4 servings


    • 8 ripe tomatos
    • 8 eggs
    • 2 red chillys
    • 1/2 tsp oregano
    • 2 crushed garlic
    • salt and pepper
    • 1/4 tsp garam masala powder(optional)
    • parsley flakes

    Directions

    1. Boil tomatos for 5 minutes.
    2. Peel and chop them finely.
    3. It's better if we remove the seeds as well.
    4. Now crush and chop garlic
    5. Heat red chillies directly on fire, when they are black remove and chop them.
    6. Heat 2 tbsp oil(Preferably olive oil) in a pan.
    7. Put garlic and red chilly with tomatos, cook it for 10 minutes till tomatos are comletely done.
    8. Add oregano, little black pepper and salt.
    9. Add garam masala powder, if you like.
    10. You can avoid garam masala completely.
    11. Pour eggs by making small shallow hole in tomatos.
    12. Sprinkle littile salt and pepper on eggs.
    13. Finely sprinkle little parsley flakes.
    14. Put the pan in a pre heated oven and bake till egg white is set.
    15. If you dont have oven, then close the pan with a lid and cook on slow fire till egg white is set.
    16. Eat with crusty bread.

    Oregano is similar to Ajwain. Use Ajwain seeds if you can't find Oregano.

    Pouring it means just breaking the egg directly over the tomato paste. Make sure egg yolk does not break.

    When you mention pouring eggs, do u mean that we just break the eggs directly into the tomato paste or do we just put the egg white or do we beat the egg well before and then add to the paste...please clarify

    After pouring eggs on tomatos, put some grated processed cheese, then bake. It will enhance flavour and taste greatly.

    Its not shallow hole but shallow dipression in tomato paste that you have cooked. This is done so that egg does not fo out when you crack eggs on tomato pste. Hope this explains.
