Rice Bread

Popular Tanzanian bread

Easy and Delicious. Goes very well with Tea.

Ingredients vegetarian 6 servings

    • 2 cups rice.
    • 1 cup grated coconut.
    • 3/4 cup sugar.
    • 1 1/2 tsp cardamom powder.
    • 2 tsp ghee.
    • 1 1/2 tsp Yeast. (Adjust yeast according to the climate)
    • Sesame seeds for garnishing.


    1. Soak  rice overnight.
    2. Next day wash rice, put in a blender with grated coconut, cardamom powder, sugar, yeast and 1/2 cup water.
    3. Grind all, in smooth batter (little granules will remain).
    4. Keep batter in warm place to rise (double in size).

    6. Take round oven (8 inchs) dish, and heat it on fire. Add ghee, spread it on sides so that all sides are greased.
    7. Reduce heat, mix risen batter and pour in it, garnish with sesame seeds, keep flame on medium and cook, till sides turn golden.
    8. Remove from fire and immediately put in hot oven, cook the top of bread, till golden brown.
    9. Cool and cut into pieces.
    10. Serve with tea or black coffee.

    Fatima, what temperature is the oven preheated to? Also do you have recipes for KT Shop kebabs (Dar-es-Salaam) and their Mandaazis?
