Vegetable pulao

tasty and healthy rice dish

Rice made with a lot of vegtables. Easy to make and rich in nutrients. Go for it!

Ingredients vegetarian 2 servings


    • 1 cup uncooked Rice
    • 1 Onion (chopped)
    • 1 tsp Ginger garlic paste
    • 1 black Cardamom (coarsely ground)
    • 2 Cloves
    • 1 Cinnamon stick (small)
    • 5 whole Black Pepper
    • 1 Bay leaf
    • 1 tsp Cumin seeds
    • 1/2 tsp Red chilli powder
    • Diced Vegetables (carrot, beans, mushroom and anything your choice)
    • Some Soy nuggets (soaked in hot water and squeezed)
    • 1½ tsp garam Masala powder
    • salt to taste
    • oil or ghee

    Directions

    1. Wash and soak rice for 15-20 minutes.
    2. Heat oil in a cooker. Add cumin seeds, cinnamon stick and bay leaf. When it starts to crackle then add black cardamom, cloves and black pepper. Cook for 20 seconds.
    3. Add chopped onion and ginger garlic paste and fry for couple of minutes or till light brown.
    4. Add the cut vegetables and Soya nuggets.
    5. Add garam masala powder and red chilli powder. Mix well and cook for 2 minutes(little water can be added if required)
    6. Add drained rice and fry for 2 minutes. Add water and salt. Mix well and close the lid of the cooker.
    7. Cook till done.
    8. serve hot with curry of your choice.

    Thanks Ekta for this Yummy Jhatpat recipi...........everybody relished it...............and less ingredients and more taste..............ideal with boondi raita............and papad...........

    As regards the quantity of water for making any pulao, I put water just 1" above the rice and then close the cooker and let it whistle just once, then shut of the heat, allow the pressure to drop and then open the cooker. If you feel that there is still water, take a clean cloth, wet it, squeeze out the water and cover the pan, put back the cover and leave for a while. The excess water is absorbed by the wet cloth, you can then fluff out the rice with a fork. Give it a try and see the results.

    one cup of water can be added if rice is soaken. To make without whistle add another 3/4 cups of water and do not use whistle It gives different taste and tastes like biryani

    this recipe is quite easy and the children too like it.

    we can add for flavour blanched sliced almonds in the end which can add taste n garnish.

    No need to add red chilli powder as it changes the colour of the dish

    you can add little coconut milk to give more relishing taste.

    One whistle is enough for the rice to get cooked.But after that do not open the lid of the cooker immediately. Let the steam escape fully by itself and then open the lid. Your rice will be fully done.Sorry for the miss of mentioning of time.

    you did not mention how many whistle in cooker,one or two or specify the time for rice.
