Stuffed Brinjal (eggplant)

Ingredients vegetarian 2 servings


    • 4 Small Brinjals(eggplant)
    • ½ Tsp ground Peanuts
    • ½ Tsp roasted ground Sesame
    • ½ Tsp dry grated Coconut
    • 1 tsp ginger-garlic paste
    • 1 tsp red chili powder
    • 1 tsp Turmeric
    • 1 tsp Coriander powder
    • 1 tsp Cumin powder
    • 2 Tsp Oil
    • 2 tsp chopped Onion
    • 1 tsp Mustard
    • 1 tsp Cumin
    • salt to taste

    Directions

    1. Partly cut the Brinjals into 4 slits and wash them.
    2. Grind the masala together and stuff in the brinjals.
    3. Heat oil in the pan and add the mustard and cumin
    4. After mustard splutters, add onions and fry till golden brown.
    5. Then add the stuffed brinjals and some 1/2 glass of water
    6. Close the lid and let it cook for 10 mins on (medium) heat.
    7. Serve hot with Roti or nans

    sorry..i tried it didnot come out well... can u pls let me know the content of ground nuts..thanks
