Put some oil in pan. Once it heats up add 2 chooped onions to it. Let these cook. Add Green chilli chopped. Once they turn pinkish add diced boiled potato and sprouts to it. Add dry masalas like salt, chilli, Jeera powder.
Cover it and let it cook till the time the sprouted moong are just done a little bit. Do not over cook else the taste will change. It would normally take 4-5 min. The sprouts should not soften but they should just loose their raw taste.
Now take off the heat and add tamarind chutney, green chutney, lime juice. Add some corriandre to this. This by itself is a yummy thing to have with some sev bhujia and curd put on it for garnish...
however to make it more interesting... in a plate arrange 10- 12 papri's on the top of each put some sprout mixture we just prepared, then add some onions, raita boondi (soaked in water and then squeezed), some curd, tamrind chutney, green chutney, some chaat masala (optional) and you are ready to go ....for a yummy healthy snack.
