Best greek salad I have ever had

Ingredients vegetarian 2 servings


    • 1 cucumber, peeled,seeded and diced
    • 1 large tomato, diced
    • 1 red pepper, diced
    • 1 scallion, finely sliced or minced
    • 2 tablespoons minced fresh parsley
    • 2 tablespoons extra virgin olive oil
    • juice of 1/2 a lemon( or more to taste)
    • 1 garlic clove, pressed
    • 1/4 tsp dried oregano
    • 8 black Calamata olives, whole or pitted and sliced
    • salt and pepper to taste
    • crumbed or grated feta cheese ( whatever amount you like)

    Directions

    1. Combine the cucumbers, tomatoes, bell peppers, scallion (or red onion), oil, lemon juice, garlic, oregano and olives in a large bowl. Add salt and pepper, and toss well. Sprinkle feta on salad when ready to serve.
    2. Even though you can serve this salad immediately, it is nice if it sits in the fridge for 30 minutes before serving.

    hi elizabeth sorry to reply late scallion is other name for spring onion and feta cheese is same like cheese but salty it mainly comes from greece

    imran, what is feta cheese? Can we substitute this with any other cheese? Also pls tell me what scallion is. How much would that cost? What is the life of these ingredients if kept in the fridge?
