Roasted brinjal and curd

very yummy side dish with chappatis or pooris

Ingredients vegetarian 4 servings

    • one big brinjal
    • 2 tsp oil
    • 1 tsp mustard seed
    • 1 tsp urad dal
    • 2 red chillis
    • 2 cups curd
    • salt to taste


    1. Wash and dry brinjal.
    2. Smear some oil all around brinjal and roast it on gas on medium heat till its cover is black and hard.
    3. Remove the peel and mash it nicely.
    4. Add salt and mix well.
    5. Temper the brinjal with mustard seeds, urad dal and broken red chillis.
    6. Add curd, mix well, check for seasoning and cool in fridge.
    7. Tastes best when served cold
