Red pumpkin curry

Coconut flavored red pumpkin dish

tangy and tasty! excellent with chappatis

Ingredients non vegetarian 2 servings


    • 1/2 kg pumpkin cut into cubes (1inch)
    • 2 tbsp grated coconut
    • 4 to 5 red chillis
    • 1 pinch l.g. powder
    • salt to taste
    • a few curry leaves
    • 1 tsp mustard seeds
    • 1 tbsp coconut oil

    Directions

    1. Heat oil.
    2. Add mustard seeds, and curry leaves. When they splutter add l.g. powder and add pumpkin pieces.
    3. fry for some time.
    4. Add salt and very little water to cook.
    5. Meanwhile grind coconut and chillis to a paste and add to the pumpkin pieces.
    6. Mix well till pumpkin pieces are cooked well.
    7. Serve hot with chappatis.

    you can adjust the number of chillis to suit your taste.

    wotz l.g powder?????

    I used a slight variation. Used coconut milk instead of ground coconut and it tasted really good too!
