Mixed Vegetable Tamarind Rice

Very tangy & tasty Rice...its different.

Ingredients vegetarian 4 servings


    • 1 cup Mixed Vegetables(Carrot, beans, Peas, Cauliflower, Potato)
    • 2 cups Boiled Basamati Rice
    • 3 tblsp Tamarind pulp
    • 1 tsp Mustard seeds (Rai)
    • a pinch of Asafoetida(Hing)
    • 1 tsp Urad dal
    • 1 tsp Channa dal
    • 5-6 Dry Red chillies
    • 1 tsp Sesame seeds (Til)
    • 1 sprig of Curry leaves
    • 1/4 tsp Turmeric powder
    • 1/2 tsp Ginger paste
    • 1/4 cup Roasted Peanuts
    • 2 tblsp Vegetable Oil
    • Salt to taste

    Directions

    1. Dice all the vegetables into same sized pieces. Boil & keep aside.
    2. Dry roast Sesame seeds & Dry Red chilles together. Cool it completely & make a medium coarse powder without adding water.
    3. Heat Oil in a kadai. Add Hing & mustard seeds. Once the seeds crackle, add Urad dal, Channa dal, Ginger paste & curry leaves. Fry for few seconds untill the dal's turn light brown.
    4. Add the boiled Vegetables, Tamarind pulp, Turmeric powder & little Salt. Mix well.
    5. Add roasted Peanuts & Ground powder(Sesame seeds & Red chillies). Mix well.
    6. Add in the Boiled Rice & mix well untill the rice is nicely coated. Adjust Salt to your taste. Serve hot with plain curd or Raita.
