Gujrati Baingan

Spicy Sball baingans ..Do try!!

Ingredients vegetarian 4 servings


    • 250 gms small Baingans (eggplants)
    • 1 big potato (raw cut into medium pieces)
    • 5-6 Tomato
    • 4-5 cloves Garlic
    • 1 onion (finely chopped)
    • Green chillies (chopped)
    • Salt to taste
    • 1/2 tsp Sugar
    • 2 tsp Red Chilli Powder + some degi mirch
    • 1 1/2 tsp Dhania powder
    • 1/2 tsp Turmeric Powder
    • 1 tsp amchur powder
    • 1 tbsp oil - for cooking
    • 1/2 tsp cumin & mustard seeds

    Directions

    1. First grind tomatoes and garlic. Just churn for 5 secs..not to make a paste. keep aside.
    2. Make two perpendicular deep cuts in baingan just as much to make a flower in 4 piece.
    3. Dice potatoes into medium size.
    4. In a pan, add oil, then cumin & mustard seeds, add finely chopped onion, saute for 2 mins, add all masalas. then add tomato and garlic mix. and saute well till it leave oil.
    5. Add baingan and potatoes and green chillies and salt.
    6. Put the heat off after 1 whistle and after it opens, add sugar and mix.
    7. Add some green dhania and serve with rice.
