tempting side dish for dosa,iddly,pongal,iddiappam,rotis,appam etc
Ingredients
vegetarian 4 servings
for masala powder:
4 tbsp dania or coriander seeds
1/2 cup chana dal
8 red chillies
1/4 cup Grated or dessicated coconut
for main dish:
3/4 cup finely chopped brinjal
1 cup finely chopped onion
1/2 cup finely chopped tomato
2 tsp ginger garlic paste
1 inch cinnamon stick
3-4 cloves
finely chopped coriander leaves
salt to taste
2 tbsp oil
1 1/2 cup water
Directions
for masala powder:
first roast co-riander seeds in pan without oil, and keep aside then roast chana dal without oil and keep aside then roast the coconut without oil till golden brown and keep aside then roast the red chillies in the oil keep aside
allow all this to cool down then in a mixie jar put the coriander ,chana and red chillies and make into powder then add the coconut and just turn a little in the mixie not too much then it becomes sticky and oily.
You can store this powder for 6 months and use. even you can use it for bisibela bath, iddly sambar .
Now for the side dish heat a pan, add oil to it and put the cloves and cinnamon stick then add the onions
Saute it till it turns pink then add ginger garlic paste,
then add the brinjal saute it for 1 minute then add the tomato saute it
now add salt and the above prepared powder to 3 or 4 tsp according to ur taste.
then add water allow to boil till it becomes thick gravy. Garnish with coriander leaves and serve. If you wish adjust the spiciness by adding chilli powder.
