Gratin a la courgette

Healthy and easy to prepare, it can be served as a meal too

My daughter's favourite dish. This gratin is a popular accompaniment to steaks, baked chicken etc. in France

Ingredients vegetarian 6 servings


    • 3 courgettes (zucchini) cut into 1/4 inch slices
    • 2 tbps all purpose flour
    • 50 gms butter
    • 2 cups warm milk
    • 100 gms grated cheese (I use gruyère or edam, they melt well) 
    • salt to taste
    • black pepper powder to taste
    • 1/2 tsp cumin (zeera)

    Directions

    1. Melt butter on slow fire.
    2. Add cumin and let crackle.
    3. Add all purpose flour and fry for a few minutes mixing constantly, till a nice perfume emanates from it and flour is beginning to change colour.
    4. Add warm milk and continue mixing so that no lumps are formed.
    5. Cook till the sauce is thick but of pouring consistency. If it is very thick, you can add some more milk.
    6. Add salt and pepper.
    7. Take off the fire.
    8. In a gratin dish or a dish with sides of 2 to 3 inches, place a layer of half of sliced courgettes. Pour half of the white sauce and 1/3rd of cheese.
    9. Cover with a second layer of courgettes and white sauce.
    10. End with a layer of cheese.
    11. Bake in a pre-heated oven at 200°C for 40 minutes.
    12. Serve directly in the baking dish.
