Hi This is Sarita from Bangalore.Try out my lipsmacking ridge gourd chutney.It is delicious.
Ingredients
vegetarian 2 servings
1 Ridge gourd weighing 500 gms,
a bunch of coriander leaves,
3 inches tamarind soaked in water,salt to taste.
For the seasoning:
2 tsp mustard seeds,
2 tbsp urid dal,
1 tsp methi seeds,
9 whole red chillies,
2 tbsp oil.
Directions
In a kadhai,heat 1 tbspn oil,when it is hot enough add mustard seeds,when they crackle,add udit dal,add methi seeds,add red chillies fry all the ingredients till they turn brown. Remove from kadhai & keep aside.
Peel the ridge gourd & chop it into small pieces.Take the remaining oil in the kadhai & slightly fry the ridge gourd.Add salt.Keep it aside for it to cool.
Grind all the ingredients with the tamarind,bunch of coriander leaves,into a smooth paste.
Ridge gourd chutney is ready tastes best with rice & chappatis.
