Simple Veggie Toast

This is a quick & tasty snack for anyone especially kids.

Ingredients vegetarian 4 servings

    • 1 pound Bread
    • 3 grated Carrots
    • 2 Onion (chopped)
    • 2-3 Medium sized Tomatoes (chopped)
    • 4-5 Green chillies (finely chopped)
    • 1 sprig of Curry leaves (finely chopped)
    • 1/2 chopped Cilantro (coriander leaves)
    • 1/2 tsp Red chilli powder
    • 1/2 tsp Sugar
    • 1/2 tsp Garam Masala powder
    • 1/2 Turmeric powder
    • 1 tsp Lemon juice
    • 1/2 cup Butter
    • Salt to taste
    • 2 tsp Vegetable Oil
    • 1 tsp Mustard seeds
    • a pinch of Hing (Asafoetida)


    1. Heat Oil in a kadai, add Hing & Mustard seeds.
    2. Once the seeds crackle, add Green chillies, Curry leaves & Onion. Fry for 2-3 mins. Add Carrot & again fry for 2-3 mins.
    3. When Onion & Carrots are soft, add Tomatoes, Red chillie, Turmeric & Garam masala powders. Mix well until everything comes together on a Medium heat.
    4. Add Sugar, Salt & Cilantro. Mix well & turn off the heat. Add Lemon juice. Mix well, cover a plate & keep aside.
    5. Lightly Butter the Bread slices & toast them on a Tava/Grill. Allow the slices to cool a bit.
    6. Spread the prepared mixture on each slice & serve immediately before they get soggy.
    7. NOTE : Green chillies can be omitted for children. Keep mixture & toasted bread separately & carry while on a trip.
