Sweet potato in imli curry

a curry made from a different root...something which sure some would like to try!!

Ingredients vegetarian 4 servings


    • 200gms sweet potato
    • 1 finely chopped onions
    • 2 finely chopped tomatoes
    • 2-3 green chillies
    • 3-4 tsps imili paste
    • 1 1/2 tsp ginger garlic paste
    • 1 tsp dhaniya powder
    • 2 tsps red chilli powder
    • 1/2 tsp turmeric
    • 1/2 tsp fenugreek
    • 1/2 tsp jeera
    • 1/2 tsp mustard 
    • curry leaves

    Directions

    1. boil or pressure cook the sweet potato(not making it too soft)with a pinch of salt.
    2. heat oil,season with mustard, jeera,fenugreek,green chillies, curry leaves and fry the onions into it.
    3. add ginger garlic paste and tomatoes and fry well adding all the powders.
    4. add the imli paste and allow to cook well till the raw smell of imli disappears and the oil seperates.
    5. now add sweet potato and waterand cook for few more minutes till it is well dipped and cooked along with the curry but take care it does not break.
    6. serve hot with rice.
