Pistachio and coconut souffle

coconut souffle is very popular in the Kerala cuisines.i have made this slightly with a variation and am sure all those who try it will like the taste too.u may use the readymade pista milk available in the stores to make it easier.

Ingredients vegetarian 4 servings

    • 500 ml milk
    • 10-12 pistachios (soaked in water)
    • 200 ml thick coconut milk
    • 3 tbsp fresh cream
    • 3 tsp gelatin
    • 4 tbsp sugar (or as per your requirement)
    • a pinch of green colour (optional)


    1. Boil milk and reduce to half the quantity.remove from flame.
    2. Grind the pistachio to a paste and add into the milk.
    3. Stir well adding the coconut milk and fresh cream.
    4. Melt the gelatin and pour into the mixture.add sugar and food colour and mix in a blender.
    5. Pour into the bowl and refrigerate to set.




    gelatin may be replaced with china grass for the vegetarians
