i had this payasam for the first time in a kerala wedding and it was awesome...!!! this may be a slight variation of the exact method....but this is how i made it.
Ingredients
vegetarian 4 servings
1 cup sliced or chopped jack fruit
2 cups coconut milk(2nd milk)
1/4 cup thick coconut milk(1st milk)
1 cup melted jaggery(200 gms)
1 tblsp ghee
5-6 cashew nuts
few raisins
few thinly sliced coconut
1 tsp cardamom powder
Directions
heat ghee and roast the cashew,raisins and sliced coconut till light brown and set aside.
in the same ghee fry in the sliced jackfruit pieces till it turns colour.
add in the 2nd milk of the coconut and let the jackfruit to boil well in it.
now add the jaggery and again cook till the whole mixture is nice and thick. this will take atleast 15-20 minutes.
add the cardamom powder and also the fried cashew raisin mixture.
pour in the 1st milk of cocnut and immediately turn off the gas.
