a very traditionally made greens and originally done in earthen dishes to acquire real taste....the blend of garlic and shallots goes well with it.kids will also love it's taste.
Ingredients
vegetarian 2 servings
2 bunches of amaranthus
10 pods of garlic
3-4 green chillies
10 shallots
tamarind(size of half lemon)
2 tomatoes
1/2 tsp turmeric
salt to taste
a pinch of hing
for seasoning
1 tsp mustard seeds
1 tsp jeera
1 tsp methi seeds
2-3 whole red chillies
Directions
Heat the kadai and add all the above mentioned ingredients and allow to cook on medium flame.
Do not cover the kadai as this will change the colour of your greens.
Cook till all the moisture is out and it will start cooking in it's own water.
Add salt to taste and when the greens are fully cooked making the garlic and shallots soft,turn off
Mash this with a wooden ladle till it is blended well.
