Boil all the vegetables except Brinjal, drain water completely & keep aside.
Heat Oil in a kadai, add Mustard seeds & Hing.
Once the seeds splutter, add Channa dal, Urad dal & Dry Red chillies. Fry till the dals turn light brown.
Add Brinjal pieces(1/4 inch pieces) & fry till soft. Add all the other vegetables & fry for a minute on a Medium heat.
Add Vangibath Spice Mix powder. Mix everything & continue to fry for another 30 secs.
Now add the pre-cooked Rice & Salt. Mix well until all the rice is coated with the masala. Remove from heat, cover & keep aside for 5-10 mins. Serve hot with Cucumber Raitha.
