Mixed Vegetable Rice

We call this as Vangibath...my mom makes it whenever we need a change from everyday's rasam & sambar.

Ingredients vegetarian 2 servings


    • 1 1/2 cups Cooked Rice
    • 1 cup Mixed Vegetables (Carrot, Brinjal(eggplant), Beans, Potato, Peas, Cauliflower, Capsicum)
    • 2-3 tbsp Vangibath Spice mix powder
    • 4 tbsp Vegetable Oil
    • 2 tsp Mustard seeds
    • a pinch of Asafoetida (hing)
    • 2 tsp Channa dal
    • 2 tap Urad dal
    • Salt to taste
    • 2 Dry Red chillies (broken in halves)

    Directions

    1. Boil all the vegetables except Brinjal, drain water completely & keep aside.
    2. Heat Oil in a kadai, add Mustard seeds & Hing.
    3. Once the seeds splutter, add Channa dal, Urad dal & Dry Red chillies. Fry till the dals turn light brown.
    4. Add Brinjal pieces(1/4 inch pieces) & fry till soft. Add all the other vegetables & fry for a minute on a Medium heat.
    5. Add Vangibath Spice Mix powder. Mix everything & continue to fry for another 30 secs.
    6. Now add the pre-cooked Rice & Salt. Mix well until all the rice is coated with the masala. Remove from heat, cover & keep aside for 5-10 mins. Serve hot with Cucumber Raitha.
