Stir fried greens

greens are a rich source of iron.the garlic and the onions add a lot of taste to this leafy side dish.coconut just adds to the taste.the same can be made even with tender drumstick leaves.

Ingredients vegetarian 2 servings


    • 1 bunch of amaranthus
    • 1 onion
    • 5-6 pods of garlic 
    • 3 whole red chillies
    • 2 tsps grated coconut(optional)
    • 1/2 tsp mustard
    • few curry leaves
    • 1/2 tsp turmeric
    • salt to taste

    Directions

    1. Wash the greens well and chop them fine
    2. heat oil and season with mustard, red chilli.
    3. crush the garlic with the skin and add it to the oil along with chopped onions.
    4. add the chopped leaves and stir fry simmered.
    5. add salt and turmeric also and keep stirring without covering till the leaves are tender and done
    6. sprinkle the grated coconut and stir for another 1 minute.
