Spicy Rava Upma

Ingredients vegetarian 2 servings


    • 1 cup Coarse Rava (semolina)
    • 2 cups Water
    • 1 cup chopped Mixed Vegetables (Potato, Carrot, Beans, Peas, Capsicum)
    • 1 chopped Onion
    • 1 chopped Tomato
    • 1 tblsp Sambar powder
    • 1 tblsp Vangibath spice mix
    • 6-7 tblsp Vegetable Oil
    • 2 tsp Mustard seeds
    • a pinch of Asafoetida (hing)
    • 2 tsp Channa dal
    • 2 tsp Urad dal
    • 2-3 Green chillies (finely chopped)
    • 4-5 Curry leaves
    • 2 tsp finely chopped Ginger
    • 2 tblsp chopped Cilantro (coriander leaves)
    • 2 tblsp Ghee (clarified butter)
    • 10 fried Cashwenuts (optional)
    • Salt to taste

    Directions

    1. Dry roast Rava till you get nice aroma. Remove it & cool.
    2. Boil the Vegetables, drain & keep aside.
    3. Heat Oil in a kadai. Add Mustard seeds, & Hing. Once the seeds crackle, add Channa dal, Urad dal, Curry leaves, Ginger & Green chillies. Fry till the dals turn light brown.
    4. Add Onion & fry for 2 mins. Add pre-boiled Mixed vegetables.
    5. Add Water, Tomato, Sambar powder, Vangibath spice mix, Cilantro & Salt. Bring to a boil.
    6. Reduce the heat & slowly add roasted Rava. Mix continuously so that no lumps are formed. Mix well for 5 mins. Turn off the heat.
    7. Add Cashwenuts & Ghee. Mix well, cover & keep aside for 5 mins. Serve hot with Curd or Coconut chutney.
