Heat 1 tbsp of Oil in a kadai. Add Cilantro, roasted Peanuts, dry Red chillies, Tamarind & Coconut. Fry for 2-3 mins. Remove to a plate & allow to cool completely.
Grind the above mixture with Jaggery & little Water. Make a fine paste. The chutney should be slightly thick in consistency.
Heat 2 tsp of Oil. Add Mustard seeds & Hing. Once the seeds crackle add Urad dal & Curry leaves. Fry till the dal turn light brown. Add it to the Chutney along with Salt. Mix well & serve with Idli, dosa, Rice Roti, steamed Rice or Punugulu.
Note: Adjust chillies according to your requirement. Red chillies can be substituted with Green chillies also.
