Papdi-Methi Rice

Rice dish made with Methi & Surti Papdi beans

Ingredients vegetarian 2 servings


    • 1 cup Surti Papdi beans (boiled)
    • 1 cup boiled Rice
    • 1/2 cup chopped Methi leaves
    • a pinch of Asafoetida (hing)
    • 1 tsp Mustard seeds
    • 4-5 curry leaves
    • 1 tbsp Lemon juice (optional)
    • 2 tbsp Vegetable Oil
    • Salt to taste
    • Grind together :
    • 4 Green chillies
    • 2 tbsp Cilantro (coriander leaves)
    • 1 tsp Cumin seeds (jeera)
    • 2 tbsp Coconut

    Directions

    1. Grind the above mentioned ingredients & keep aside.
    2. Heat Oil in a kadai. Add Hing, Mustard seeds & Curry leaves.
    3. Once the seeds splutter, add Methi leaves & fry for 10 secs. Add the ground mixture & fry for a minute.
    4. Add the boiled Surti Papdi beans & boiled Rice. Mix well for 2 mins.
    5. Add Salt & Lemon juice. Mix well & serve hot with Curd or Coconut chutney.
