Ash gourd in coconut gravy

Ingredients vegetarian 4 servings


    • ½ kg Ash Gourd (Outer skin removed)
    • 1 cup grated fresh coconut
    • 3 Red Chilly
    • 1 tsp Poppy seeds
    • 1½ tbsp Oil
    • 4-5 Curry leaves
    • Salt
    Ash gourd is also known as Petha in north india.

    Directions

    1. Heat ¼ tsp of Oil (each time) and roast Poppy seed & Chilly separately
    2. Grind coconut and chillies into fine paste with little water. When paste is almost done add poppy seeds and grind
    3. Cut Ash gourd into small cubes and boil in sufficient water (do not add too much water) 
    4. Add coconut paste to boiled Ash gourd and add salt to taste (Add pinch of turmeric powder if desired) and boil in small flame till gravy starts bubbling
    5. In a spoon heat remaining oil and add curry leaves and add them with the gravy.
