Quick Sambar Rice

good for a quick lunch!!

a best way to please yourself with a complete meal.the consistency of this depends on the quantity of water you add...my hubby's favourite sambar Rice is delicious to eat with boondi.serve hot with a dash of ghee...........!!

Ingredients vegetarian 4 servings


    • 3/4 cup rice
    • 1/4 cup tuvar dal
    • 9-10  shallots
    • 1 drumstick (chopped into 1 inch pieces)
    • 1 carrot diced
    • 50 gms diced beans
    • 25 gms green peas
    • 3-4 brinjals(optional)
    • 1/2 tsp red chilli powder
    • 1/2 tsp turmeric powder
    • 1 tsp sambar masala powder
    • tamarind( a lime sized soaked in water)
    • a pinch of hing
    • salt to taste
    • 1/2 tsp mustard seeds
    • 1/2 tsp methi seeds
    • 1/2 tsp jeera
    • curry leaves and coriander
    • 2 whole red chillies
    • 1/2 onion sliced lengthwise

    Directions

    1. wash the tuvar dal and rice together.
    2. add 31/2 glasses of water to it.
    3. put all the vegatables into it except the sliced onions.
    4. add also the chilli powder,turmeric and sambar masala powder.
    5. add salt and hing along with methi and jeera seeds.
    6. pressure cook till 5-6 whistles.
    7. remove and open when pressure settles.
    8. season this by spluttering mustard, whole red chilli,curry leaves,coriander and sliced onions.fry till onions turn brown.
    9. squeeze the tamarind pulp thick and add to the seasoning.allow to boil for few minutes and add to the cooked rice mixture.blend well and cook for another few minutes continuing to stir on low fire till the mixture is soft.
    10. serve hot with papads or kara boondi.
