Bingan ka Raita

baingan ka raita, what u want to eat again and again.

Ingredients vegetarian 6 servings

    • 1/2 kg brinjals
    • 325 gm fresh yogurt
    • 3 cloves of garlic
    • 2 tsp coriander seeds
    • 2 tsp cumin seeds
    • 7-8 whole red chillies
    • salt to taste
    • 4-5 whole red chillies
    • 3 cloves of garlic (cut into round shape)
    • 6-7 curry leaves
    • 1 1/2 tsp cumin seeds
    • 1 tsp mustard seeds
    • oil as req


    1. Wash brinjals and put it in a water and boil it.
    2. Roast coriander seeds, cumin seeds and whole red chillies and grind it. (make a powder foam).
    3. Put yogurt,roasted powder,garlic,salt in a grinder.(dont grind so much otherwise yogurt will be very watery).
    4. Now turn out this mixture in a deep bowl.
    5. Put boiled brinjals in a grinder and 1 cup of water and grind it as well.
    6. Now add this mixture in a same bowl and mix it with spoon very well.
    7. Heat a oil in a pan and add whole red chillies,cumin seeds,mustard seeds,curry leaves and in last add garlic flakes.when ir crackle and garlic turns in a golden clour (not black) then add this tadhka in the raita.
    8. Serve it with boil rice or thin chapatis.
