just a variation from the regular potato fry adding some extra flavour.....the same can be done using cilantro too.goes well with dal and rice or plain sambar too.......
Ingredients
vegetarian 4 servings
300 g potatoes
1/2 cup mint leaves
2 green chilles
2tps red chili powder
1/2 tsp turmeric
1/2 mustard seeds
2 onions
salt to taste
Directions
Chop the onions finely. dice potatoes. grind mint leaves along with green chillies coarsely and set aside
heat oil and add the mustard seeds to this.
then fry the onions and potatoes to it adding red chilli and turmeric with salt to taste. fry on medium flame till aloo is almost done.
stir in the ground mint paste to this and fry till the aloo coats well with the herb.serve hot with rice and dal
