This is the first choice of my kids & in laws, when I ask them which soup???The fragrance of lemon grass, ginger, spring onion & cilantro is breath taking & the hot & sour taste is irresistible.
Ingredients
non vegetarian 1 servings
2 tbsp oil
chicken breasts cut into strips
5 -6 jumbo shrimps
2 cloves of crushed garlic
1 tsp grated ginger
7 fresh red chilli chopped
4 stalks lemon grass cut into 2 inch pieces
1 cup mushrooms
4 cup chicken stock
3 tbsp fish sauce
1 tbsp chili sauce
Salt to your taste
2 tbsp corn flour mixed with 1 tbsp water
6 spring onions cut into circles.
2 tbsp chopped coriander
2 whole lemon's juice.
Directions
In a soup pot heat the oil add the chicken strips & shrimps. Fry until it changes color.
Add the stared items & fry all until a nice fragrance is in the air.
Pour the stock & bring to the boil and simmer for 10 min
Add the fish/chili sauce.
Add corn flour mixture & stir until it turns thick.
Adjust the salt to your taste
Add the spring onion & chopped coriander
Pour in the lemon juice, give it a stir & remove from heat.
