Quick and Easy Chicken and Coconut soup

This soup goes well with biryanis and pualo’s

Ingredients non vegetarian 4 servings


    • 1 cup coconut milk
    • 3-4 flakes garlic (finely chopped)
    • 2 tsp cumin seeds
    • 1 tbsp corn flour (dissolve in water)
    • 1 tbsp oil
    • Few curry leaves
    • Chicken stock as required
    • Fresh coriander leaves for garnish (finely chopped)

    Directions

    1. Heat oil, add garlic, cumin seeds ,curry leaves  and fry for a few seconds
    2. Add coconut milk and stir for a minute,
    3. Add chicken stock salt and pepper and cornflour paste
    4. Allow to simmer for a while
    5. Garnish with fresh coriander leaves
    6. Serve hot
    Note : you can also  use coconut milk powder
