Gnocchi is a type of Italian dumpling pasta. Last night I had pasta for dinner and I saw the cook make this dish in front of me so I though of sharing it with you all. It was really creamy and yummy.
Ingredients
vegetarian 4 servings
3 medium potatoes boiled till tender and skins removed.
1 1/2 cup flour
1/2 tsp salt
1 large egg
1 tbsp finely chopped coriander.
For sauce:
2 tbsp oil
2 cloves of crushed garlic
salt and pepper to adjust your taste.
1 tsp crushed red chilli
1 cup your choice fresh mix veggies=(mushrooms, bell peppers, broccoli, cauliflower, spinich)
1 breast tandori chicken (shredded or cut into cubes)(Opt)
1/4 cup white sauce
4 tsp pasta sauce.
3 tbsp shredded mozzarella cheese.
Directions
In a bowl combine slightly hot mashed Potatoes, salt and egg then add the flour.
Knead gently until the flour is fully incorporated and the dough is soft, smooth, and a little sticky, 30 seconds to 1 minute.
set aside for 20 min then cut the dough into 4 halves and roll out each to a rope( about 3/4' in diameter).
cut into 1/2" squares and press each piece against the inside of a curved stainer, to obtain a curved shape.
Cook the gnocchi salted boiling water, removing them with a slotted spoon a minute or two after they rise to the surface.
Now in a wok heat 2 tbsp oil, fry crushed garlic, place the crushed red chilli, black pepper, and salt.
Add your veggies and toss fry for 2 min,
Add 1/4 cup white sauce and pasta sauce toss fry for 2 min.
Add the Gnocchi and toss to combine all to a sauce gnocchi and serve hot topped with shredded cheese.
