Khajas

These Khajas r not the syrup ones these are made wit my own method and they have a greater fragrance to it due to the honey and tastes better to me.

Ingredients vegetarian 6 servings


    • 1 1/2 cup flour
    • 1/2 tsp baking powder
    • a pinch of salt
    • 1/4 tsp cardamom powder
    • 3-4 drops lemon juice
    • 2 tbsp ghee
    • enough water to make stiff dough(approx 1/2- 3/4 c)
    • 1/4 cup corn flour and 1/4 c ghee
    • 2 cup honey
    • Oil for frying(for best result use ghee)

    Directions

    1. In a pot bring the honey to a boil and leave aside and keep it  warm.
    2. In a bowl combine flour, salt, baking powder and cardamom powder.
    3. Rub in the ghee until flour is crumbly
    4. Add lemon juice and enough water to make a stiff dough then leave aside for 1 hour.
    5. Divide the dough into 15-20 small balls and roll out each dough into thin roties.
    6. sprinkle it with  ghee and corn flour then roll it like a Swiss roll.
    7. Cut each roll  into small pieces 1"thick  length wise and just press them with hand. Do not press too hard or the layers get stuck.
    8. Heat oil and Deep fry in medium heat until the Khajas turn golden.
    9. Dip in warm honey and allow it to absorb the honey for 1 min then remove from syrup and put on a wired rack.
    10. Set on a plate and serve.

    My mum used to make these on festival when we were young and she dipped them in syrup. It was something I used to look forward to.Her's used to melt in the mouth. Thank you for sharing I am going to try them out in remembrance of my mum back home.
