chocolate custard cake.

Recipe by rabz of Dhaka, BD

Thanks 2 my sister's Filipino friends who have shared some wonderful baking recipes with me that I would like to share with u all.

Ingredients non vegetarian 6 servings

    For caramel
    • 1/4 cup sugar
    • 1 tsp butter.
    • 1 can condensed milk
    • 3 egg yolks
    • 1 tbsp custard powder
    For cake:
    • 5 eggs (2 yolks + 5 whites)
    • 1 cup sugar
    • 1/4 cup oil
    • 1/2 cup warm milk
    • 3 tbsp water
    • 1 1/2 cup self raising flour
    • 1 tsp vanilla
    • 2 tbsp coco powder

    Directions

    1. Caramelize the sugar with butter over low flame and pour in a square dish
    2. Take 3 bowls: In a bowl beat egg white until stiff peaks and set aside
    3. In another bowl beat condensed milk, 3 egg yolks and custard powder until nice and creamy custard is visible, pour this over the caramelized sugar.
    4. In the third bowl beat 2 egg yolks , oil and sugar until pale in colour add flour, coco, vanilla, water and milk in two bathes and make a nice and creamy cake batter.
    5. Fold this in the egg white slowly (if u whisk it 2 much it will not be spongy).
    6. Pour the cake batter over the centre of the dish and bake in a pre heated oven (200 deg c) for approx 1 hour (over a basin of water tray).
    7. Remove from heat and cool then separate the sides of the cake from the dish, cover with a cling and leave in the refrigerator over night.
    8. Remove the cling and place a large square dish over it then put the cake up side down, This way the caramel, then custard will be above the cake.
    9. Cut into desired shapes and serve.

Hi Mrs Roy, there is no need to grease the tray as the caramel already has butter in it so after it's chilled it will eventually slip out of the tray when u put it up side down ,just make sure to release it with a knife from the sides.Cheers.

should we grease the baking tray with oil or butter or should we flour the tray??
