Thanks 2 my sister's Filipino friends who have shared some wonderful baking recipes with me that I would like to share with u all.
Ingredients
non vegetarian 6 servings
For caramel
1/4 cup sugar
1 tsp butter.
1 can condensed milk
3 egg yolks
1 tbsp custard powder
For cake:
5 eggs (2 yolks + 5 whites)
1 cup sugar
1/4 cup oil
1/2 cup warm milk
3 tbsp water
1 1/2 cup self raising flour
1 tsp vanilla
2 tbsp coco powder
Directions
Caramelize the sugar with butter over low flame and pour in a square dish
Take 3 bowls: In a bowl beat egg white until stiff peaks and set aside
In another bowl beat condensed milk, 3 egg yolks and custard powder until nice and creamy custard is visible, pour this over the caramelized sugar.
In the third bowl beat 2 egg yolks , oil and sugar until pale in colour add flour, coco, vanilla, water and milk in two bathes and make a nice and creamy cake batter.
Fold this in the egg white slowly (if u whisk it 2 much it will not be spongy).
Pour the cake batter over the centre of the dish and bake in a pre heated oven (200 deg c) for approx 1 hour (over a basin of water tray).
Remove from heat and cool then separate the sides of the cake from the dish, cover with a cling and leave in the refrigerator over night.
Remove the cling and place a large square dish over it then put the cake up side down, This way the caramel, then custard will be above the cake.
