Coconut Rice

This dish is very popular in South India.

Ingredients vegetarian 4 servings

  • 2 cups Rice (basmati)
  • 1 no. Coconut, scraped
  • 1 tbsp Mustard seeds (black)
  • 1 tbsp Black gram (split)
  • 6 nos. Red Chilies, dry
  • 1 bunch Curry Leaf
  • 5 tbsps. Clarified Butter
  • Salt to taste

Directions

  1. Wash rice and soak in warm water for 20 minutes.
  2. Drain the water and fry rice in 1tbsp. ghee.
  3. Then pour double quantity of boiled water and cook rice.
  4. Remove it from fire and let it cool.
  5. Meanwhile pour 2tbsp. of ghee in a pan and fry coconut till light brown in color.
  6. Remove it from fire and put in a plate.
  7. Pour the rest of the ghee and put mustard seeds in it, when it starts to crackle put the urad dal, red chillies and finally the curry leaves.
  8. Then remove it from fire and mix all the ingredients with the rice.
  9. Serve hot with chicken curry or any hot curry.

doesn't taste much with basmati.
