Carrot Cake with a Difference!!!

A Variation on the theme

My two year old daughter adores this!!!. a great tea time snack for children.

Ingredients non vegetarian 6 servings

    1 1/2 cup all purpose flour 1/4 tsp Baking soda 1 cup Grated Carrot 1 cup Oil 1 cup shredded coconut 1 tsp vanilla essence 1/2 tsp Elaichi powder 1/4 cup milk 2 eggs 1 1/4 cup sugar 1/2 cup nuts ( shredded almonds,walnuts, cashews & raisins)


    1. Beat eggs Well.
    2. Add sugar, oil, carrots, flour and baking soda. fold well.
    3. Add the remaining ingredients, one at a time. mix all well.
    4. Grease an oven proof dish with butter. Pour this batter( note that the batter is of a thick consistency).
    5. Bake at 400F for 30 minutes.
    6. Check with knife ( it comes out clean if the dish is done).
    7. Cool before serving

    Hi Friend, Thanks for posting the recipe. I tried out your cake but dont know why even after keeping it in oven for so long, though the upper & lower portions of the cake turned brown but inside it was uncooked. Any reasons what could have caused it, i followed the steps exactly as you mentioned.


    I just had the first slice of this, and it is just yummy!!!!! I made one change, that I took same quantity of all wheat flour instead of all purpose flour. This recepie is toooooooo good. Thanx a lot!!
