I got this recipe from one of my favorite cookbooks "The Kosher Palette", it is a fundraiser cookbook for a school, and this is one of my favorite recipes from it. I hope you enjoy it.
Ingredients
vegetarian 6 servings
Salad
2 tbsp oil
1 (8 oz. pack) button mushrooms, sliced
1 lb. shitake mushrooms, sliced
2 heads bibb lettuce, torn into pieces
Dressing
1 cup veg oil
1/4 cup vinegar
1 tbsp. fresh lemon juice
2-3 tsp chopped fresh dill
1 1/4 tsp salt
1/2 tsp dry mustard powder
1/2 tsp pepper
1/4 tsp sugar
1/4 tsp dried oregano
2 cloves garlic, pressed
a pinch of thyme
Directions
Prepare dressing by combining all dressing ingredients in a jar. Cover and shake vigorously so that the dressing is emulsified.
Heat oil in a large skillet and saute mushrooms until tender.
