Warm Mushroom Salad Recipe

I got this recipe from one of my favorite cookbooks "The Kosher Palette", it is a fundraiser cookbook for a school, and this is one of my favorite recipes from it. I hope you enjoy it.

Ingredients vegetarian 6 servings


    Salad
  • 2 tbsp oil
  • 1 (8 oz. pack) button mushrooms, sliced
  • 1 lb. shitake mushrooms, sliced
  • 2 heads bibb lettuce, torn into pieces
  • Dressing
  • 1 cup veg oil
  • 1/4 cup vinegar
  • 1 tbsp. fresh lemon juice
  • 2-3 tsp chopped fresh dill
  • 1 1/4 tsp salt
  • 1/2 tsp dry mustard powder
  • 1/2 tsp pepper
  • 1/4 tsp sugar
  • 1/4 tsp dried oregano
  • 2 cloves garlic, pressed
  • a pinch of thyme
  • Directions

    1. Prepare dressing by combining all dressing ingredients in a jar. Cover and shake vigorously so that the dressing is emulsified.
    2. Heat oil in a large skillet and saute mushrooms until tender.
    3. Combine all other salad ingredients
    4. Add enough dressing to coat, tossing well
