Marrow Rice

delicious spicy rice.if red chilli is more spicy,please reduce it.

Ingredients vegetarian 4 servings


    • 2 cups cooked Basmati Rice
    • 1/2 kg (6) nos. Marrow (Squash)
    • 1 tsp Haldi
    • 2 tsp Chana dal
    • 1 tbsp Dania
    • 4 nos.Red chilli
    • 2 cloves
    • 2 cinnamon stick of 1 inch size
    • 6 cashew nuts
    • 2 tbsp grated coconut
    • 1 tbsp peanuts(skin removed)
    • 2 inch size tamarind (cut it very small pieces)
    • 1/2 tsp Jeera
    • 2 tsp Oil
    • Salt,to taste
    • 1 tbsp corainder,chopped for garnish

    Directions

    1. Wash and peel the outer skin of marrow and cut them into small dice.
    2. Dry roast first,tamarind separately. Take it out and then roast chanadal, dhania, red chillis, cloves,coconut,peanuts and cashew nuts.
    3. Powder them Coarsely in the mixer including tamarind.
    4. Heat oil in a pan and add jeera and cinnamon stick and after it crackles,add marrow and haldi.cook for 3 minutes.
    5. Then add grinded powder.Marrow reduces and cooks in few minutes itself.
    6. Add Salt. If u take one piece & press,it will press. It means its cooked. Don't overcook.
    7. Mix well with Basmati Rice and garnish with coriander leaves.
