Carrot Celery soup

A healthy soup easy to make.

Ingredients vegetarian 4 servings


    • 4 carrots cleaned and diced
    • 1 long stick of celery
    • 1 tomato diced
    • 1 small onion diced
    • 3 cloves of garlic crushed
    • 1 tbsp butter
    • 1 tsp whole black pepper
    • 1 tsp oregano
    • 3 cups water
    • salt as per taste
    • chopped celery leaves for garnishing

    Directions

    1. In a pressure cooker ,  add butter , crushed garlic and peppercorns and saute for a while. 
    2. Then add the onions and saute for  a min.
    3. Add the tomatoes and carrots and saute.
    4. Now add the celery stick and water.
    5. Pressure cook this till 2 whistles.
    6. Let the mixture cool for a while and then blend it in the mixer/blender till it is smooth.
    7. Pour the blended mixture in another vessel and let it simmer for 5 to 10 mins stirring occasionally.
    8. Add salt , oregano , crushed pepper . Adjust the seasoning.
    9. Garnish with celery leaves.
    10. Serve hot with bread sticks.
