A delicious brinjal rice

Ingredients vegetarian 2 servings


    • 1 cup of cooked rice
    • 5-6 Big size Brinjals(violet one tastes better)
    • 4 tbsp of refined oil
    • Crystal salt
    • ½ cup os water
    • mustard seeds for seasoning
    • 3 tsp of ghee
    • Curry Powder

    For making curry powder:

    • ½ cup of Corriander seeds
    • 1 cup of Red chillies
    • ½ cup bengal gram dal
    • 2 tsp of hing

    Directions

    1. Dry roast coriander seeds and Bengal gram dal till golden brown in colour.
    2. Add 1 tsp of oil and add hing to it and then add red chillies nad roast them.
    3. Once the above items cools grind it to a fine powder. Now the curry powder is ready.

    Method to make vaangibath.

    1. Cut brinjals into small pieces.
    2. Add tbsp of oil in the kadai and aloow it to heat up.
    3. Now add mustard seeds and allow it to splutter.
    4. Add the brinjals and crystal salt
    5. Now add ¼ of water and close the kadai.
    6. Stir occasionally. Brinjals must be well cooke.
    7. Once the brinjals are cooked add 2-3 spoons of curry powder and mix well.
    8. Keep this on a low flame for 5-7 mins.
    9. Spread the rice in a plate and pour the gravy to it.
    10. Mix rice and the gravy such that both mixes well.
    11. Now add ghee and this for 2 hrs.
    12. Vaangibath is ready to serve.(serve it with a raita of your choice)

    Note: This rice can been taken hot but after allowing for few hours it tastes very good.
