Simple pumpkin subji with Coconut

Ingredients
vegetarian
2 servings
1 cup Red Pumpkin
2 Green Chillies/Red Chillies
1/2 cup grated Coconut
3 tsp Vegetable Oil
2 tsp Mustard seeds
a pinch of Asafoetida (hing)
2 tsp Channa dal
2 tsp Urad dal
4-5 Curry leaves
1/4 tsp Turmeric powder
Salt to taste
Directions
Cut Pumpkin into small pieces.
Heat Oil in a kadai. Add Mustard seeds, Hing, Channa dal, Urad dal, Curry leaves & Green or Red chillies. Fry for 30 secs.
Add Pumpkin pieces, Turmeric powder & Salt. Mix well. Sprinkle little water, cover a lid & cook till the pieces are soft.
Once the pieces are soft, add grated Coconut & mix well for 30 secs. Serve hot with chapati or steamed Rice.
