special flavoured sweet rice served to us on eid by our friends.u can add mawa or coconut to this or any spices.
vegetarian 2 servings
1 cup Basmati rice
1/2 cup sugar
1 1/4 cup milk
water in between 1/4 cup and 1/2 cup.
5-6 saffron strands (1 tsp milk to soak saffron)
8-10 cashew nuts
3 tbsp ghee
a pinch kesar colour
Wash & Soak rice in water for half an hour.Drain the water.Use this water for dissolving sugar.
Heat a kadai and melt ghee and roast cinnamon, clove, elaichi, cashew nuts and at last raisins,Take it slightly brownish.keep it aside.
Heat the pan and add ghee.
Add rice and saute for a minute and add saffron milk,food colour and milk.Cover it with the lid.
In between just outside toss the pan so that rice won't stick to the pan.
Cook till 3/4th is done.At this stage milk would have been absorbed.
Dissolve sugar in water. Make syrup.keep aside.
Keep the tawa and above that place the cooker and in 'dum' mode,add ghee,then add a layer of rice and on top sugar syrup,roasted spices,raisins and again a layer of rice and sugar syrup and roasted spices.add ghee.
Cover with aluminum foil and keep thick plate on top.
keep on simmer for 10-15 minutes.
After 15 minutes,open it and you could see the flavoured,orangish colour rice and gently mix and serve.
Note:.i used cooker as its the only heavy bottomed vesel i have.u can use any non stick vessel or hindolium.
