Cashewnuts fried in spices and shallow-fried again with spicy-gram flour coating.Try this tasty cashew packora recipe at home.
Ingredients
vegetarian 4 servings
20 cashews - broken into halves
1 tsp chilli powder
1/4 tsp turmeric powder
1 tsp salt
2 tsp ghee
For the batter:
1 1/2 cup Gram Flour (kadalai mavu)
little more than 1/2 cup water
1/2 cup chopped sambar onions
2 cloves of garlic - crushed
3 tsp thick ground masala (1 tsp Cumin Seeds, 3 red chillies,a pinch of asafoetida powder,few coriander leaves, 3 curry leaves)
2 tsp Salt
1/2 cup refined oil
Directions
Heat 2 tsp ghee in pan. Add the cashews and saute for 20 secs.
Add chilli powder, turmeric powder and salt.Saute for a min and keep aside.
Mix the gram flour with ground masala,chopped onions,crushed garlic cloves,salt and water.Mix well so that no lumps should form. The batter should be thick .
Add the fried-cashewnuts to gramflour batter and Mix well.
Heat oil in the frying pan .Put the gramflour batter as shapeless pieces in oil and shallow fry on bothsides in oil,till golden brown. Similarly make all the pakoras.
Hot and fresh Cashew Pakoras are now ready to be served with tomato ketchup or coriander (coconut) chutney.
