Ilaneer(Tender-Coconut Kernels) Pudding

Pudding made with Tender-Coconut Kernels

Very sweet and delicious mix of Ilaneer with milk and bread pieces. Try at home and enjoy.Needs very less cooking-time after adding the Tender-Coconut Kernels.Strict vegetarians can try this without egg.

Ingredients vegetarian 6 servings

    • 3 cups tender coconut kernels-chopped fine
    • 1 cup condensed milk
    • 1 cup coconut milk
    • 1 cup ordinary milk-boiled
    • 2 cups tender coconut water
    • 1 cup sugar
    • 3 bread slices-edges removed and sliced into 1 cm size pieces
    • 1 tsp cardamom powder
    • 1 tsp vanilla essence
    • 1 egg -beaten well
    • few saffron strands-soaked in 1 tbsp milk
    • few crushed cashews,crushed pistachios and chopped almonds(soaked in water and peeled)


    1. Take a microwave bowl,put the bread pieces,condensed milk,coconut milk,ordinary boiled milk,tender coconut water and mix well.
    2. Add sugar and dissolve it completely.Add the beaten egg and mix well.
    3. Add cardamom powder and vanilla essence and mix well.
    4. Microwave this on high for 12 mins.
    5. Take the bowl out and add tender coconut(chopped fine) and dissolved saffron and mix well
    6. Microwave this on medium for 5 mins.
    7. Take the bowl out.
    8. Serve this warm or chilled garnished with cashews,almonds and pistachios.

    Those who want to try this recipe without M.Oven, take a pressure pan and do first 4 Steps and pressure-cook upto 1 whistle and leave it till the pressure is released .Open the lid add chopped Ilaneer and soaked saffron and mix well.Cook on low flame without covering for 4-5 mins and turn off the flame.
