U can try this Kuzhambu with Mushrooms(reduce the tamarind pulp to 1/2 cup),drumsticks,ladies fingers and Boiled eggs too.
Ingredients
vegetarian 4 servings
1/2 kg brinjals - cut into bite size pieces
15 shallots-cut into halves
2 green chillies-slit
10 garlic cloves-peeled
1 tsp ginger-garlic paste
1 tsp asafoetida powder
1 tsp cumin seeds
1 tsp mustard seeds
1 1/2 tsp chilli powder
1/2 tsp coriander powder
1/2 tsp turmeric powder
1 cup thick tamarind pulp- extract of lemon-size tamarind
1 cup thick coconut milk
1 1/2 cup second coconut milk
1 tbsp refined oil
1 1/2 tsp salt
few coriander leaves
few curry leaves
Directions
Heat oil in a kadai,add garlic cloves,mustard seeds,cumin seeds,curry leaves and shallots.Saute this for 2 mins.
Add brinjal pieces,ginger-garlic paste,green chillies,asafoetida powder,coriander powder,turmeric powder and chilli powder.Saute this till oil separates from the mixture.
Add the tamarind pulp and let it boil till oil separates(for 12 mins).
Add the thick and second coconut milk,salt and coriander leaves and let it simmer for 7 more mins on medium flame.
Serve this Brinjal Kuzhambu with Rice, Idli, Dosa,etc,.
