very tasty teatime snack .U can try this dish with Apple,banana etc.Needs 10 mins cooking time only.
Ingredients
vegetarian 8 servings
100 g All purpose flour
10 pineapple slices(peeled,de-seeded and cut roundly)
40 gm sugar
50 ml refined oil
few cashew nuts, kismis, almonds (chopped)
1/2 tsp baking powder
1/2 tsp salt
1 tsp vanilla essence
1/2 cup coconut milk(optional)
water as required
Directions
Grate 5 pineapple slices and pulse the remaining 5 slices using a mixer-grinder
Mix maida with salt,2 tbsp sugar,baking powder,grated pineapple,pulsed pineapple,coconut milk (optional),salt and required water and mix this and keep this aside to settle thick like idly flour.
Heat oil in a tawa,spread the pineapple pancake and shallow fry till it turns golden brown on both sides.
Sprinkle little sugar and chopped nuts,kismis and almonds on top of each pancake while serving the dish.
