U can try this Stuffed masala with Boiled Egg,Capsicum and Tomatoes too.Happy cooking!.
vegetarian 4 servings
For the Stuffing:
3 medium-sized potatoes-boiled for 8 mins-skins peeled and cut the edge at one end and scoop out the potato and use the scooped out potatoes,mash them and use that for stuffing
1/2 tsp ginger-garlic paste
1/2 tsp cumin seeds
1/2 tsp garam masala
3 tbsp grated paneer
1 tsp white pepper
1/2 tsp salt
few coriander leaves
100 ml refined oil for deep-frying
1 tbsp corn flour
1 tbsp maida with 1/4 tsp salt
For the masala:
1/2 tsp chicken masala powder
1 big onion - half onion finely chopped and half pasted fine
2 tsp tomato puree
1 tsp any good chicken masala powder
Ground masala of (5 whole cashew nuts pasted with 2 tsp soaked poppy seeds,1/2 tsp saunf seeds,2 tbsp dry-roasted peanuts(skinless)3 tbsp grated coconut,1 cm ginger,2 garlic cloves,1/2 tsp garam masala and 1 green chilli)
1/2 tsp mustard seeds
1/2 tsp cumin seeds
few curry and coriander leaves
1 tbsp refined oil
3/4 tsp salt
150 ml water
For the stuffing:
Mash the scooped potatoes,add 1/2 tsp ginger-garlic paste,1/2 tsp cumin seeds,1/2 tsp garam masala,3 tbsp grated paneer,1 tsp white pepper,1/2 tsp salt and few coriander leaves.Mix this well and stuff this in the scooped-out boiled potatoes.
Make a thick paste of cornflour,maida and salt. Seal the one end with this thick paste and rub this paste over the whole potatoes too..
Heat 100 ml refined oil and deep-fry this in oil till golden brown.Take them out and cut each potato into 4 pieces (like a flower petals) but not fully.
For the Masala:
Heat oil in a pan,add mustard seeds,cumin seeds,chopped onions,curry leaves and salt.
Saute this for 4 mins atleast and add tomato puree,onion-paste,chicken masala,ground masala,water and coriander leaves.Stir-cook this for atleast 5-7 mins or till done as a semi-dry gravy.
Pour this over the stuffed potatoes and serve this hot with Rice or any Indian breads.
